Fruit Tart Recipe
This recipe has been in my family for decades! It's easy to make, but time consuming to put together. Worth it though, because it looks just GREAT for a summer dessert!
Fruit Tart
Ingredients
1/2 batch of sugar cookie dough (or one store-bough refrigerator sugar cookie dough)
1 - 8 ounce box of cream cheese
1/2 cup of sugar
1/2 tsp of vanilla
5 kinds of colorful fruit (kiwi, berry, banana, mandarin orange, pineapple, etc.)
and for the glaze....
1/2 cup sugar
1-1/2 tbsp cornstarch
1 dash salt
1 cup orange juice (or canned fruit juice)
Directions
Prepare cookie dough as directed. Press dough onto a pizza pan. Bake at 350 degrees for 12-15 minutes depending on dough thickness, until done. Cool completely.
While cooling, prepare the fruit. I use strawberries and cut them in half, blueberries, drained canned mandarin oranges, and raspberries. Wash, slice and dry on a paper towel. Mix together the cream cheese, 1/2 cup of sugar and vanilla. Beat until smooth. Spread onto cooled crust. Arrange fruit in a circular design.
Make glaze. Use fruit juice from canned fruit, or use orange juice. Mix 1/2 cup sugar, cornstarch, dash of salt with the juice. Stir, and bring to a boil in a saucepan. Boil for 2 minutes, stirring constantly. Cool until barely warm. spread over the top of the tart with a brush.
Refrigerate covered.
