I recommend Exploring Creation with Biology for 9th grade science. It's a great intro to high school science because it has no prerequisites, and you don't need to take physical science or general science first.
Prior to 9th grade, I don't recommend science textbooks. Instead, I recommend teaching your children to LOVE science during middle school. Using unit studies, or lots of hands-on experiments, you can avoid textbook science until later. That way when you get to high school, they will say "I love science! This will be fun!" instead of thinking "I hate science! Textbooks are boring!"
If you have a gifted child, ready for a science textbook early, then start with biology.
If you don't have a math/science gifted child, please understand that it's quite rare to teach high school physics. In order to be successful with physics, the child must have already completed per-calculus. Few children get that far along in math that they get into physics for science. So don't worry if you don't get there, and no matter what happens, don't give them a physics textbook unless they have enough math to be successful.
